A graduate in Tourism from the Isla joined as a new associate in 1994, prior to which he worked for the Port of Lisbon. With an innovative spirit and in-depth knowledge of the sea and quayside fish markets, he offered mobile phones to fishermen so they could let him know the day’s catch had arrived.
He has brought the ingredients and flavours of Portuguese gastronomy to the restaurant’s cuisine, as well as fish sourced directly from the fishermen.
Together with Viviane Durieu, they recently opened another restaurant – “A Travessa do Fado”.
